Soft & Chewy Chocolate Cookies with Peppermint Frosting

Why We Love Them

Easy! Delicious! Beautiful! This little cookie covers all of your holiday needs.

I love to leave a border around the edge of the cookie so you can see the rich chocolate underneath the cool, creamy peppermint frosting.

The sprinkles in the photos are from Sweetapolita. I couldn't find those exact ones, but I think this blue edible glitter dust would be so pretty!

Can We Ship 'Em?

Yes! Let the frosting fully set first. The thicker the frosting, the better it is to transport.

Make-Ahead Options

This cookie dough needs some chill time anyway, so yes, a perfect make-ahead cookie dough. Just remember that chilling dough for longer than the recipe states will result in a puffier cookie.

This is neither good nor bad, just that the cookie may look a wee different than the photos.

Several Days in Advance...

If it's only for a few days you have several options. You could make the cookies ahead of time, store in an airtight container at room temp and then frost them right before serving.

Or, you could make the dough, wrap tightly and store in the fridge for several days. When ready to bake, set the dough out on the counter until closer to room temperature and then follow the remaining recipe instructions.

Several Weeks in Advance...

You can freeze this cookie dough as dough balls or as a larger mass of dough, your choice.

If you freeze dough balls, set them on the prepared baking sheet and bake once they are closer to room temperature.

If you froze the entire mass of dough, you'll want to defrost in the fridge overnight and then move to the kitchen counter to finish defrosting.

Once it's closer to room temperature, pick up with instruction #3 and finish your cookies.

Please note, cookie dough made with melted chocolate can be quite firm if it spends time in the fridge or freezer. It will need to come really close to room temperature to be easy to work with.

More Tips

  1. Chill Time. There are two short periods that the dough needs a wee chill: first after just being mixed and second, the dough balls need a quick chill prior to going in the oven. Allow time in your baker's timeline.
  2. Candy Canes. This peppermint frosting would be delicious with crushed candy canes in there, and then more sprinkled on top to decorate. Just remember that candy canes can weep, so add to the frosting and the tops just prior to serving.
  3. Bread Flour. You can replace the bread flour with all-purpose flour in a pinch, 1:1.
  4. Sprinkles. Sprinkles or crushed candy canes add so much flare to these cookies, don't leave them out!
