โ Hi Reader! Yesterday was National Chocolate Day, which is another reason (excuse) to eat more chocolate! ๐ฅณ I wanted to shine a light on some of my favorite chocolate treats, starting with this glorious Chocolate Brownie Meringue Cake! It's everything you love about brownies: rich, deep chocolate flavor with that decadent (dreamy!) fudgy texture. This meringue cake has the added bonus of a crispy, chocolate meringue top that crinkles and cracks and as it cools. It's perfect on its own, and next level when topped with cool vanilla ice cream, a dollop of tangy crรจme fraรฎche, fresh whipped cream and/or brown sugar caramel. I wouldn't kick berries out of the equation either! I use a springform pan to make this (the same pan you would make a cheesecake in). The cake rises quite a bit during baking and you'll need those high sides to keep it contained. *IF* you use a regular cake pan, make sure it has 10-cup capacity with at least 3-inch (8-cm) tall sides. This meringue cake is made in a similar way as my favorite brownie recipe, so it's pretty unfussy. It'll take you about 20ish minutes to throw together and it needs about 55 minutes in the oven.
