Super Soft Chocolate-Mint Andes Cookies ππ¦ (DAY 10 of 12 Days of Cookies)

These uber soft Andes Cookies basically melt in your mouth! An Andes mint-chocolate candy is placed over the top of the freshly baked cookies, and after several minutes, you'll use the back of a spoon to smear it over the top.
The result? The Andes chocolate leaves the top of the cookie slightly underbaked. Giving you a perfectly fudgy cookie that is chocolate mint cookie perfection.
This easy, one-bowl recipe doesn't need a mixer (yay!), and the dough freezes like a dream (see details below the recipe).
When my daughter Stella tasted them, she said they tasted just like a peppermint mocha! The chocolate cookie base has some espresso powder that's added for the perfect (optional) kick!
The tops of the cookies are glossy when just baked (see photos) and then will set to a matte finish once cooled.
