Burnt Sugar Ginger Cookies!

Why We Love Them

I can't even begin to tell you how much I love this cookie. Originally created for The Cookie Book, I've now made it a one-bowl dough (you'll still need a saucepan for the burnt sugar/hard caramel) and I need each and every one of you to stop everything and make it now.

This is the cookie to wow friends with and completely annihilate the competition at a cookie exchange. I'm just saying.

The sugar isn't actually 'burnt'. It's made into a hard caramel (the same one we use for the Salted Caramel Chocolate Chip Cookies).

Can We Ship 'Em?

Yes! Always in an airtight container and always with cushioning...but yes, she's a shipper's dream.

Make-Ahead Options

I haven't made these ahead of time in so long, my memory is a wee spotty. They're a pretty easy cookie so I typically make them the day that I want to serve them. β™₯️ The cookies will stay fresh and fab in an airtight container at room temperature for up to three days.

More Tips

  1. ​Make the Hard Caramel First. Make the hard caramel and then set it aside to cool while you mix up the cookie dough. Chop it just before going into the cookie dough. If there's a bit of humidity in the air, it will become sticky if it sits around after it's chopped up.
  2. Nudge Your Cookies Post-Bake. Have a clean silicon (or nonstick) spatula ready to nudge any misshapen cookies back into a circle as soon as they get out of the oven. This cookie bakes up beautifully, but sometimes any caramel at the edge of the cookie will melt in the oven and make the cookie a little lopsided.
  3. This cookie seems like it has an insane amount of ginger, but I PROMISE YOU, it's the perfect amount!
