Bright & Sunny Raspberry Lemon Loaf ☀️


Good afternoon Reader!

Happy Friday! If I don't love the way a recipe looks then I typically don't promote it much...which was the case with this Raspberry Lemon Loaf Cake. So I updated the photos and the entire blog post and I'm in love with it all over again!

As you can see from the photos, the crumb is light, fluffy and perfectly moist. It's loaded with fresh raspberries and lemon zest, and then covered in a lemony lemon glaze.

In a word, perfect.

I made some minor edits to the recipe: a wee more flour, the addition of baking powder to the leavening, a touch more salt and finally, I lowered the temperature and baked it for a bit longer (because I thought overall the exterior became too dark while baking at the higher temp).

Not only are there new photos (that I love), but I included step-by-step photos and got rid of any excess content above the recipe.
