Chewy Candy Cane MacaroonsπŸŽ„πŸ¦Œ (DAY 3 of 12 Days of Cookies)

Hi Reader!

A fun twist on classic macaroons!

This foolproof recipe whips up the most perfect coconut macaroons. We then dip them in rich, dark chocolate (to balance the sweetness!) and finish with a festive coating of finely crushed candy canes.

The best part? The coconut macaroon base can be mixed and baked in under 45 minutes. They take no time at all.

I've included a heap of expert tips for making perfect meringue (one of my favorite things to do!) and for melting chocolate so you get professional results every time.

  • A Note on Timing: If you're adding the chocolate and peppermint, be sure to allow an extra hour for cooling and an additional hour for the chocolate to set.
  • Shipping/Freezing: These cookies can be frozen (see notes on the recipe page!). However, I wouldn't recommend the candy cane version for shipping as the crushed peppermint candy can begin to weep after several days. The plain or chocolate-dipped macaroons travel well!

Leave any questions on the recipe page and I'll get back asap. I hope you love this delicious, festive treat as much as we do!
