🍫 The Chocolate Cookie I've Been Eating All Week!! 🍫

I received several questions about this Chocolate Rye Cookie, and I wanted to address them asap! The first question was about the grams/cups of the rye flour and the second was regarding the salt quantity in the cookie dough.

This recipe was originally posted in 2017 and I was curious if I would still love it as much as when I first posted it.

The answer is a resounding YES!!! This cookie is indeed fantastic and the recipe needed zero edits. Both the rye and salt quantities are great.

Here's what you can expect from this cookie: a chewy, soft texture that is, frankly, fabulous. This cookie has big chocolate flavor that the earthy rye flour does a nice job of tempering just enough. The pops of chewy dried cherries are the perfect contrast in taste and texture.

You're going to love it.

SOME RECIPE NOTES:

  • Rye Flour: Originally tested with dark rye flour, it works with any rye flour (light or medium).
  • Bread Flour: Love the bread flour in this cookie, but you could replace both the bread and rye flours with all-purpose flour. Although then, it would be a different cookie experience. Get the rye flour, at least!
  • Resting Cookie Dough: This dough was originally created to rest. However, when making them again I found that resting is optional. You'll get a thicker cookie if you do, but it's not mandatory.
  • Freezing Cookie Dough Balls: This dough FREEZES LIKE A DREAM. I portioned out into dough balls, froze them and I've been eating fresh cookies nightly, after dinner, with a glass of red (see below). I've been having some post surgery pain and indeed, this combo seems to help. ;)
  • Pairs Nicely With: A delicious red wine. I love Hitching Post Highliner...it's a great local red, easy sipper and I highly recommend!
