I work with a really great tech company that makes sure my site is safe, fast, secure and they also give me overall website advice from time-to-time. They're amazing and I don't know what I'd do without them!!

One thing they have been suggesting (for years) is for me to create some easy, no-bake recipes for the summer months. And I finally did it! Yay us! πŸŽ‰

These no-bake chocolate peanut butter bars are so easy and delicious, I don't even know what to say.

The Details...

The cookie bar base is a dreamy mix of peanut butter, butter, vanilla, confectioners' sugar (powdered sugar), brown sugar and finely ground graham cracker crumbs.

Pro-Tip: You can easily swap out the graham crackers for vanilla wafers, Biscoff cookies or even pretzels (delicious).

Everything gets mixed together, pressed into an 8x8-inch (20x20-cm) or 9x9-inch (23x23–cm) baking pan, and topped with a smooth layer of melted peanut butter and chocolate. That's it! No oven required.

  • Make it your own: I added mini chocolate chips to the cookie base and roasted salted peanuts to the top, but both are totally optional.
  • How to serve: I like these best stored in the fridge and snacked on while chilled.

I gave my parents some and they absolutely loved them; my dad has already requested another batch! I hope you'll give them a try!!
