Here's this week's lineup for ultimate cookie bliss!

  1. ​Soft & Chewy Chocolate Chip Peanut Butter Cookies with Salted Roasted Peanuts: The perfect chocolate chip peanut butter cookies loaded with puddles of chocolate, crunchy, salted peanuts and topped with flaky sea salt. This is the ultimate cookie! These delicious one-bowl cookies are ready in 30 minutes, what could be better?!
  2. ​Salted Caramel Blondies: The first cookie recipe on DisplacedHousewife and still a favorite!! These blondies are LOADED with flavor! Imagine the chewiest, gooey brown butter blondie base layered with flavors of espresso/coffee, dark brown sugar, chocolate chips, vanilla and salted caramel!
  3. ​Coffee Toffee Cookies: Picture the most perfect soft, brownie-like double chocolate cookie base and then load it up with the flavor of espresso, crunchy milk chocolate-toffee candy bars and bits of melty chocolate puddles. This is easily my latest favorite cookie!

I can't wait for you to taste these crispy around the edges, and soft and gooey in the center, cookies!
  5. ​Mega Fall-Spiced Pumpkin Snickerdoodles: These bakery-style, super soft Brown Butter Pumpkin Snickerdoodles are everything you're looking for in a fall cookie! Loaded with lots of vanilla, brown butter, spices and pumpkin, these are a leveled-up version of a classic snickerdoodle cookie. The texture is super soft and gets some nice crunch from the Demerara sugar they're rolled in (this can be omitted if you don't have any on hand).

These are perfect to satisfy your mid-week cravings, dazzle your friends and family or just nosh on while watching tv after a long day...which might be my favorite way to savor a cookie!

A quick note about the bonkers delicious Herby Lemony Potato Focaccia recipe that went out last weekend. There was an internal problem with the newsletter and many of you couldn't access the links.
