Hi Reader! Very excited to come at you with these Coffee Toffee Cookies that are inspired by a Levain Bakery cookie! Levain cookies are thick, delicious and loaded with add-ins. Inspired by their cookie, I created one just for us using the same flavor profile. I started with recipe test #6 from my favorite Crinkly Brownie Cookie. I loved that version so much, but it wasn't perfect for the Brownie Cookie. I added espresso flavoring to that double chocolate cookie base and then threw in chopped up Heath Bars (Skor Bars work too!) and some more chopped up chocolate. THESE ARE HEAVEN! My version is not as thick and I scaled back the add-ins a bit, but they are just as rich and decadent as the original...and soft and delicious and I love them so much.
