Let's talk about brown butter, because if you're not using it, you're not living. It's a simple step that takes a recipe from "pretty good" to "I-can't-stop-eating-this." I’m talking about a flavor that's nutty, toasty, and has more personality than a celebrity chef.
And the best part? It’s SO easy to make. Just follow these simple rules:
Use a light-colored pan. This is crucial, people! You need to see those little golden bits (aka toasted milk solids) at the bottom of the pan.
Don't leave the stove. Seriously, put your martini down. Stop reading the news. This process happens fast, and you can go from golden-bronze heaven to burnt-disaster-in-a-saucepan in about two seconds flat.
Scrape up the good stuff. Those little toasted bits at the bottom? That's where all the magic is. Make sure you get them all into your recipe.
