Periodically we have to go in and update older posts. That can look like getting rid of excess and/or unnecessary content, updating photos or editing the recipe so it's easier to follow.

Ultimately, the most important part is THE RECIPE! That's why you all are here.

This week I choose two of my favorites to update: Brown Butter Chocolate Chip Cookies (a small-batch recipe) and Brown Butter Muscovado Chocolate Chip Cookies (an OG reader favorite!).

Google doesn't love it when you have two recipes that are named the same...and previously, these were both titled as brown butter chocolate chip cookies. To make the algorithm happy, I clarified the titles and remade both cookies to refresh my taste buds as to what makes each recipe fabulous (and worthy of your time!).

The photos you see here of both cookies are classic iPhone photos (which makes me miss the Instagram days of yore!). Even though these recipes are extremely similar, they are the perfect example of how small changes in a recipe yield wildly different results.

MUSCOVADO CHOCOLATE CHIP COOKIES

The Muscovado Chocolate Chip Cookie (seen in the photo above), is so incredibly dark it doesn't look like a classic chocolate chip cookie. That deepened, rich color is from the combination of brown butter (which always darkens a cookie), along with dark muscovado sugar.

This cookie is a luxury. It takes a little bit longer to make, requires a specialty sugar that most of us don't have on hand and uses two flours. It's the perfect cookie for when you want something a little different or you want to dazzle your friends. The combination of muscovado and brown butter yields a cookie that is loaded with rich caramel and toffee flavors.

BROWN BUTTER CHOCOLATE CHIP COOKIES

This gem (pictured above!), was created as a result of the Muscovado Chocolate Chip Cookie. I wanted a similar cookie that was easier. You likely have every ingredient in your cupboard right now.

If you eye the ingredients between the two, they are strikingly similar (minus the muscovado and bread flour), which makes the contrast of the two such a case study in how small changes can yield big results.

This cookie can be whipped up in a flash and the results will knock your socks off. A traditional brown butter chocolate chip cookie that's one of the least fussy cookies you will bake. This is another one of Stella's favorite recipes!

Don't let the ease of this cookie deceive you! That's the magic of it because it is so incredibly loaded with flavor (brown butter, brown sugar and vanilla really show up in this cookie!).

I just sampled both cookies to confirm that they are both soft chocolate chip cookies (my favorite kind!).

One final note on both cookies: I didn't have a neutral oil in the house when I made these so I just grabbed some olive oil and both came out great...so don't let the oil in the ingredients keep you from making them if you don't have what I specify in the ingredient list.
