Here they are!

My mom loves the lemon ricotta pancakes from Scarlett Begonia's, so I had it on the January agenda to make my own version of them.

BUT, before I even got started I was completely pressed by having to go out and get ricotta. It's just not an ingredient I use much. Greek yogurt, on the other hand, is always in my fridge!

I did a couple of things to make these Lemon Greek Yogurt Pancakes extra fabulous:

  • One-bowl recipe. If you use a microwave-safe bowl, you could even melt the butter in it before mixing everything together.
  • You don't need to bring ingredients to room temperature. You're going to add hot water and melted butter to the mix and that will perfectly bring the remaining wet ingredients to room temperature.
  • MEGA lemon flavor. About 2 lemons will deliver all of the zest and fresh lemon juice to pack the perfect lemony punch.
  • No special ingredients. Your standard baking ingredients (plus the Greek yogurt and lemons) are all you need!
  • Ready in 30 minutes. They're super quick to throw together.
  • Overnight option. I tested mixing the batter the night before and then cooking off the pancakes in the morning. They were fab. I love a make-ahead recipe!

You can serve these with the blueberries, mixed berries, macerated berries, good ol' maple syrup, whipped cream, strawberry jam, lemon curd...basically, the sky is the limit.
