My Favorite Bakery-Style Muffins (+ Secrets!) 🀩

I love muffins! All kinds of muffins. With fruit, with chocolate chips, with streusel or with a sprinkle of sugar and spices. I'm all in.

Below you'll see some of my favorites (including these chocolate zucchini muffins pictured above!).

My Favorite Muffin-Baking Tips

  1. Weigh your ingredients. The balance between liquids and solids is crucial. Using a scale ensures you get it right every time. This is my favorite scale if you're in the market! (New to scales? Just reply to this email and I’ll help you out.)
  2. Use muffin liners. They provide a buffer for even baking and make your muffins perfectly portable.
  3. The 3/4 Rule. Most muffins rise best when filled 3/4 full. Unless the recipe says otherwise, stick to this to avoid the dreaded "overflow."
  4. Let the batter sit. This allows the flour to hydrate and the gluten to relax. The result? A light, bouncy, "bakery-style" texture.
  5. One pan at a time. Center your pan to allow hot air to circulate perfectly.
  6. The High-Low Heat Trick. Most of my recipes start at a high heat to get that "lift," then reduce. Set a timer so you don't miss the reduction!

DIY Muffin Liners

Don't have liners? Cut 4 to 5-inch (10 to 13 cm) parchment squares. Press them over the bottom of a small glass that fits your muffin well, then tuck them in! Note: DIY liners usually yield larger muffins, so they may need a few extra minutes in the oven.

I’m still perfecting the Blueberry Muffin Bread, but in the meantime, I have the MOST fabulous Lemony Greek Yogurt Pancakes for you.

I originally wanted to make lemon ricotta pancakes, but I realized I never have ricotta, but I always have Greek yogurt. These are bright, fluffy, and so easy.

Stock up for the weekend:

  • 2-3 Lemons
  • 3/4 cup (180 g) Greek yogurt
  • Plus the baking basics: butter, sugar, eggs, flour, baking soda/powder, salt, and vanilla.
