Crispy, Chewy, Gooey Bar Cookies!

Hi Reader!

Bar cookies have so much to offer! I love that you're basically mixing up cookie dough and only baking it once. We don't have to portion out anything or place sheet-after-sheet in the oven. All that labor just to satisfy a sweet tooth. 🫠

In this bar cookie utopia we get to pop these babies in the oven and then lounge on the couch watching the Gilded Age until they're done.

Bar cookies are perfect all by themselves or equally dazzling topped with vanilla ice cream. Heaven.

​Ultimate Skillet Brookies​

Thick, fudgy brownie dough meets chocolate chip cookie dough and you have the perfect bar cookie creation. You can also use a 9Γ—13 (23Γ—33-cm)baking dish; see Notes below the recipe!


​Jammy Raspberry Bars​

These buttery Jammy Raspberry Bars with Streusel are the ultimate berry dessert! A vanilla shortbread crust is layered with sweet raspberry jam, plump fresh raspberries and finished with an easy streusel topping. ​One-Bowl Decadent S'mores Cookie Bars​

One bowl and twelve ingredients, these Chewy S'mores Cookie Bars start with a brown sugar-rich cookie dough base. On top of that, a layer of whole graham crackers, marshmallow fluff (also called cream) is spread over the top, a sprinkle of chocolate chips and then the remaining cookie dough. These are soft, chewy cookies bars that taste just like a giant s'mores party and they are mixed, assembled and baked in under an hour. What could be better?!


​Gooey Classic Blondies with Chocolate Chips​

This delicious chewy blondie recipe is loaded with the toasted flavor of browned butter, dark brown sugar (you can also use light!) and heaps of vanilla extract. They come together quickly in one bowl (aside from the pan needed to brown the butter) and in spite of the hardship of having to wait until they're completely cool to cut them, they are UTTER PERFECTION!

Holy Moly this recipe is everything I wanted! I filled the recipe exactly, only straying to add pecans, and the blondies are perfect even better the next day. Rebecca is right you will NOT think they are baked through but trust and take them out of the oven when the edges are set with a jiggly, puffed center.
