My Un-January Cozy Baking List" ❄️

Hi Reader!

My favorite approach to January is relaxation...truly. I don't gravitate towards 'dry January' or cleanses or anything like that. We had fun in December, good for us!

Instead, I like to spend this month reflecting on what brought me joy last year and what I want to carry into this one to make it truly fabulous. In a shock to no one, baking is at the top of that list (otherwise, what would we all be doing here?!).

While I do like to move my body more because that always seems to dip off in December (hellooo early morning walks! I highly recommend them!!), I still love a cozy baking project. Something to make the kitchen smell fabulous and just lean into the coziness of the season.

These are some of my favorites and the most popular, early-year recipes. Hit reply and tell me the one bake you can't live without in the winter. I'd love to hear!

The photo above is the perfect chocolate chip peanut butter cookies loaded with puddles of chocolate, crunchy, salted peanuts and topped with flaky sea salt. This is the ultimate cookie! These one-bowl cookies are ready in 30 minutes, what could be better?!

Banana Chocolate
Chip Muffins

The ultimate 'one-bowl-and-done' solution for those spotty bananas on your counter, featuring a healthy amount of chocolate chips and a super-plush crumb that makes every morning feel just a little more fabulous.

Single-Layer
Guinness Cake

Dark, damp, and incredibly easy to throw together. It’s a "lazy" cake that looks and tastes like you spent hours on it. Top it with my favorite malted frosting. Heaven.

Jammy Cranberry Streusel Bars

A staple for winter! They feature a simple shortbread crust, a jammy cranberry filling flavored with orange zest and Chinese five-spice, and a crunchy streusel topping.

Bakery Style
Coffee Cake Muffins

These feature a massive amount of cinnamon streusel. They are high-domed, plush, and taste exactly like they came from your favorite bakery.

Hot Chocolate Cookies with Marshmallows

Imagine a mug of rich, velvety hot cocoa transformed into a fudgy, one-bowl cookie—complete with a crackly top and a gooey marshmallow center that makes leaning into winter feel like a total luxury.

My Absolute Favorite Lemon Blueberry Scones

Tender, buttery, and bursting with berries. The hint of lemon zest makes them feel fresh and perfect for a slow weekend breakfast.

Soft Cranberry Orange Sugar Cookies

These were such a high last month! Soft, cloud-like Orange Cranberry Sugar Cookies are loaded with orange flavor and plump tart dried cranberries!

Incredible Malted Chocolate Chip Cookies

Malted milk powder is the "secret ingredient" here. It adds a nostalgic, nutty depth that pairs perfectly with a big glass of milk (or oat milk!).

Vegan Chocolate Chip Oatmeal Cookies

*The* Erewhon knock-off cookie! Thick, chewy, and loaded with oats and dark chocolate. They are the ultimate "wholesome" comfort food for a cold January afternoon.

Chewy Vegan Brownie Cookies

You’d never know these are vegan. They use a sneaky prune-puree base (trust the process!) to get that exact shiny, crackly top and fudgy center of a real brownie.

Fudgy Brown Butter
Brownies

These are legend-status. By browning the butter first, you get a deep, toffee-like base that makes these the fudgiest, most decadent brownies on the blog.

Soft & Chewy Classic Snickerdoodles

These are everything you want in a snickerdoodle cookie: soft, tangy and perfectly chewy. This recipe is one bowl and they are mixed, baked in under 25 minutes, and are the perfect snickerdoodle cookie!

Brown Butter Pecan Chocolate Chip Cookies

Incredible toasted pecan chocolate chip cookies loaded with brown butter, dark brown sugar and vanilla for a flavor explosion you'll love!

Herby Lemony Potato Focaccia

The savory star of the list. Topped with thinly sliced potatoes and fresh herbs, it’s the best thing to serve alongside a bowl of hot soup.

Salted Peanut Butter Cup Cookies

Peanut butter cup lovers unite! You're going to love this one-bowl, super soft Chocolate Peanut Butter Cup Cookie Recipe!

Toasted Walnut Chocolate Chip Cookies

Thick, Gooey Toasted Walnut Chocolate Chip Cookies are ample, bakery-style cookies (read: big!) that are loaded with chopped, toasty walnuts, lots of chocolate chips and a gooey, slightly underbaked center. You are going to love these cookies!

Dirty Chai Snickerdoodles

These are the best easy Dirty Chai Snickerdoodles you'll ever bake! Soft, chewy snickerdoodle cookies infused with warm chai spices and a kick of espresso powder—no chill time needed for this dough!

Chocolate Rye Cherry Cookies

My favorite flavor trio (chocolate, cherries and rye!) all rolled into one delicious cookie! The texture in these is truly beyond: soft, chewy and fabulous.

Hi Reader! Here they are! My mom loves the lemon ricotta pancakes from Scarlett Begonia's, so I had it on the January agenda to make my own version of them. BUT, before I even got started I was completely pressed by having to go out and get ricotta. It's just not an ingredient I use much. Greek yogurt, on the other hand, is always in my fridge! I did a couple of things to make these Lemon Greek Yogurt Pancakes extra fabulous: One-bowl recipe. If you use a microwave-safe bowl, you could even...
