β Hi Reader! I thought we needed something bright and cheery this week, and so I present to you these light & fluffy lemon poppyseed muffins! Here's what's fabulous about them: π Light-as-air muffin interior that almost melts when you take a bite. I'm not joking. π Mega lemon flavor! Four tablespoons of lemon zest, fresh lemon juice + a drizzle of lemon glaze over the top. Perfect. You'll need about 4 lemons total for the muffins + glaze. π A crown that's to-die for! Let the muffin batter have a scant 20-minute rest while you clean up the kitchen and preheat the oven. This lets the flour absorb moisture and results in the perfect tender crumb and tall, puffy crown. π We love it. π Why poppyseeds? People say they add crunch! Nutty flavor! Omegas! But I would venture to say that at 2 tablespoons of poppyseeds divided amongst 15 muffins, this is purely aesthetics. And honestly, I'm here for it. Think of them as nature's sprinkles. π She's a one-bowl number that is super easy breezy to make (promise). Your friends will love you. Your neighbors will thank you. Your nervous system *might* feel a touch more regulated. Since these muffins are basically medicinal and soothing for the soul, I think you should be wearing cozy clothes and definitely light your favorite candle while making them. Hi Reader! Here they are! My mom loves the lemon ricotta pancakes from Scarlett Begonia's, so I had it on the January agenda to make my own version of them.
